Recipe:
Pineapple-Mint Sorbet
2 cups pureed ripe pineapple
1/2 cup unsweetened pineapple juice
5 drops mint extract fresh mint for garnish
Combine pineapple, juice, and mint extract in an ice cream maker and process according to manufacturer's directions. Garnish with fresh mint and serve.
If uou don't have an ice cream maker, combine the ingredients in a medium bowl, freeze for about 4 hours, then place in a food processor or blender and process before serving. If the sorbet is frozen solid, run it through a juicer before serving to improve the texture.
